QUALITY OF COLD PRESSED SAFFLOWER AND MILK THISTLE OIL

The research was carried out in 2021 - 2022 at the Agricultural Academy of Vytautas Magnus University, the Institute of Agricultural and Food Sciences and the Plant Raw Materials Quality Laboratories of the Open Access Joint Research Center for Land and Forestry. The quality of safflower and milk thistle oil was studied. The aim of the work was to study the changes in the quality of safflower and milk thistle oil during storage. The data were processed by one-factor analysis of variance (ANOVA) using the computer program STATISTICA 10. Thus, it can be said that safflower oil, compared to true milk thistle, differed in its chemical composition - a higher amount of fat, oleic acids, peroxide and fiber.
